Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 8 ounces Fresh mozzarella cheese
  • 2 cups Cherry tomatoes
  • 3 cloves Garlic cloves, minced
  • 0.5 cups Fresh basil leaves
  • 1 tablespoon Balsamic vinegar
  • 0.5 teaspoons Red pepper flakes (optional)
  • 2 tablespoons Grated Parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Season the chicken breasts on both sides with salt and black pepper.

Step 3

In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the chicken breasts for 3 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant.

Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring frequently, until they begin to burst and release their juices.

Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Remove the skillet from the oven and let it rest for 5 minutes. Sprinkle the chicken with the grated Parmesan cheese and the remaining fresh basil leaves.
