Ingredients

  • 4 large eggs Egg whites
  • 28 grams Mozzarella cheese (low-fat, shredded)
  • 1 handful Spinach (fresh)
  • 4 pieces Cherry tomatoes (halved)
  • 1 teaspoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)
  • 2 leaves Fresh basil leaves (optional, for garnish)

Directions

Step 1

Crack 4 large eggs and separate the egg whites from the yolks. Discard the yolks or save them for another recipe. Whisk the egg whites in a bowl until they are frothy and slightly airy.

Step 2

Add the salt and black pepper to the whisked egg whites and mix gently to combine.

Step 3

Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat, ensuring the surface is evenly coated.

Step 4

Once the pan is hot, pour in the whisked egg whites and cook for 2-3 minutes, or until the edges begin to set but the surface is still slightly wet.

Step 5

Sprinkle the shredded low-fat mozzarella on one half of the omelette. Add the fresh spinach and halved cherry tomatoes on top of the mozzarella.

Step 6

Using a spatula, carefully fold the other half of the omelette over the filling. Press down gently to seal the edges.

Step 7

Cook the folded omelette for another 2-3 minutes on low heat, or until the cheese is melted and the egg whites are fully cooked through.

Step 8

Slide the omelette onto a plate and garnish with fresh basil leaves if desired. Serve immediately and enjoy a healthy, delicious breakfast!
