Ingredients

  • 120 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 60 grams Unsalted butter
  • 120 milliliters Whole milk
  • 2 large Eggs
  • 150 grams Mozzarella cheese, shredded
  • 30 grams Grated Parmesan cheese
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the butter and milk. Heat the mixture over medium heat until the butter is fully melted and the milk starts to bubble lightly. Remove from heat immediately.

Step 3

Add the flour, baking powder, and salt into the saucepan. Stir vigorously with a wooden spoon until the mixture comes together into a smooth dough that pulls away from the sides of the pan.

Step 4

Let the dough cool for about 5 minutes, or until it's warm but not hot to the touch.

Step 5

Add the eggs one at a time, mixing thoroughly after each addition. The dough will appear lumpy at first but will smooth out as you mix.

Step 6

Fold in the shredded mozzarella, grated Parmesan, dried oregano, and black pepper until evenly combined.

Step 7

Using a tablespoon or a small cookie scoop, drop rounded spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the cheese puffs are golden brown and puffed up.

Step 9

Remove from the oven and let them cool briefly on the baking sheet before serving warm.
