Ingredients

  • 1 loaf Baguette
  • 3 tablespoons Olive oil
  • 2 cloves Garlic cloves
  • 4 cups Fresh spinach leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 8 ounces Mozzarella cheese
  • 0.25 cups Grated parmesan
  • 0.25 teaspoons Red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into 1/2-inch-thick slices, aiming for about 20 pieces. Place the slices on a baking sheet.

Step 3

Brush each slice with olive oil (about 2 tablespoons total for all slices).

Step 4

Bake the baguette slices for 6-8 minutes, or until lightly golden and toasted. Remove from the oven and let them cool slightly.

Step 5

While the bread toasts, mince the garlic and set 1 clove aside.

Step 6

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 minced garlic clove and sauté until fragrant, about 30 seconds.

Step 7

Add the spinach to the skillet, cooking until wilted, about 2-3 minutes. Season with salt and black pepper, and stir until combined. Remove from heat.

Step 8

Slice the mozzarella into thin pieces, about the size of your baguette slices.

Step 9

Lightly rub the second whole garlic clove across the surface of the toasted bread for added flavor.

Step 10

Top each crostini with a slice of mozzarella, followed by a spoonful of the cooked spinach mixture.

Step 11

Sprinkle a small amount of grated parmesan and, if desired, red pepper flakes over each crostini.

Step 12

Return the baking sheet to the oven for another 2-3 minutes, or until the mozzarella has melted slightly.

Step 13

Serve warm and enjoy your Mozzarella and Spinach Crostini!
