Ingredients

  • 1 loaf Baguette
  • 3 tablespoons Olive oil
  • 2 cloves Garlic
  • 8 ounces Mozzarella cheese
  • 2 whole Roasted red peppers
  • 6 large leaves Fresh basil leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Balsamic glaze

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into approximately 1/2-inch thick slices, yielding about 16 pieces.

Step 3

Brush one side of each slice with olive oil, using about 2 tablespoons in total. Arrange the slices oiled-side up on a baking sheet.

Step 4

Toast the bread in the oven for 5–7 minutes, or until lightly golden and crisp. Remove from the oven and set aside.

Step 5

While the bread is toasting, mince the garlic and mix it with the remaining 1 tablespoon of olive oil.

Slice the mozzarella into thin rounds and set aside. Cut the roasted red peppers into strips about 1 inch wide.
