Ingredients

  • 170 grams Unsalted butter
  • 200 grams Granulated sugar
  • 100 grams Brown sugar
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 300 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 150 grams Crystallized ginger, finely chopped
  • 50 grams Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, salt, ground ginger, and ground cinnamon.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

Step 6

Gently fold in the finely chopped crystallized ginger using a spatula, ensuring it’s evenly distributed throughout the dough.

Step 7

Scoop out tablespoon-sized portions of dough (about 25 grams each) and roll them into balls with your hands.

Step 8

Roll each dough ball in the additional granulated sugar until fully coated, then place them on the prepared baking sheets, spacing them about 5 cm (2 inches) apart.

Step 9

Flatten each dough ball slightly with the palm of your hand to ensure even baking.

Step 10

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly cracked. Do not overbake; the centers should remain soft.

Step 11

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 12

Serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 5 days.
