Ingredients

  • 4 lbs Pork butt (bone-in or boneless)
  • 32 oz Sauerkraut (with brine)
  • 1 large Yellow onion, sliced
  • 3 cloves Garlic, minced
  • 1 tsp Caraway seeds
  • 2 tbsp Brown sugar
  • 1 cup Chicken or beef broth
  • 1 medium Apple, cored and sliced
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 leaf Bay leaf
  • 2 tbsp Vegetable oil (for searing)

Directions

Step 1

Pat the pork butt dry with paper towels and season all sides with salt and ground black pepper.

Step 2

Heat a large skillet over medium-high heat and add the vegetable oil. Once hot, sear the pork butt on all sides until browned, about 2-3 minutes per side. Remove from skillet and set aside.

Step 3

In a 6-quart slow cooker, add the sauerkraut (with its brine) as the base layer.

Step 4

Layer the sliced onion, garlic, caraway seeds, brown sugar, and sliced apple over the sauerkraut.

Place the seared pork butt on top of the sauerkraut mixture.
