Ingredients

  • 2 cups Whole wheat flour
  • 1 teaspoon Salt
  • 0.75 cups Water
  • 1 cup Grated carrots
  • 0.75 cups Grated cheese (cheddar or mozzarella)
  • 1 unit Green chili (finely chopped)
  • 0.25 cup Fresh cilantro (finely chopped)
  • 0.5 teaspoons Ground cumin
  • 0.25 teaspoons Red chili powder
  • 0.25 teaspoons Garam masala
  • 2 tablespoons Oil or ghee for cooking

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead into a soft, pliable dough. Cover with a damp cloth and set aside for 15-20 minutes.

Step 2

In another bowl, mix the grated carrots, grated cheese, green chili, chopped cilantro, ground cumin, red chili powder, and garam masala. Combine well to form the paratha stuffing.

Step 3

Divide the dough into 8 equal portions and roll each portion into small balls. Flatten the balls slightly with your hands.

Step 4

Take one dough ball and roll it out into a small circle (approximately 4 inches in diameter) using a rolling pin. Place a generous portion of the carrot-cheese stuffing in the center.

Step 5

Bring the edges of the dough circle together to seal the stuffing, pinching at the top to close tightly. Flatten gently and dust with a little flour.

Step 6

Carefully roll the stuffed dough ball into a larger circle (approximately 6-7 inches in diameter). Be gentle to avoid the stuffing breaking through.

Step 7

Heat a skillet or tawa on medium heat. Place the rolled paratha on the skillet and cook for 1-2 minutes until bubbles appear. Flip the paratha and spread a small amount of oil or ghee around the edges.

Step 8

Cook for another 1-2 minutes on the other side until golden brown spots appear. Flip again and cook for a few seconds if needed.

Step 9

Remove the paratha from the skillet and keep warm. Repeat with the remaining dough and stuffing.

Step 10

Serve the hot Carrot and Cheese Parathas with yogurt, pickle, or a side of chutney. Enjoy!
