Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 cinnamon stick
  • 4 cups whole milk
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 0.333 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0 optional ground cinnamon (for garnish)
  • 0.25 cup raisins (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized pot, combine the rice, water, and cinnamon stick. Bring to a boil over medium heat, then reduce to low heat and simmer uncovered until the rice has absorbed most of the water, about 10-12 minutes.

Step 3

Remove the cinnamon stick from the pot.

Step 4

Stir in the whole milk, sweetened condensed milk, evaporated milk, and sugar. Mix well and cook over low heat, stirring frequently to prevent sticking or burning.

Step 5

Simmer for 20-25 minutes, or until the mixture thickens and the rice is tender. Stir continuously during the last 10 minutes to achieve a creamy consistency.

Step 6

Remove the pot from heat and stir in the vanilla extract. If using raisins, fold them in now.

Step 7

Let the rice pudding cool for 10 minutes. The pudding will thicken further as it cools.

Step 8

Serve warm or chilled. Sprinkle ground cinnamon on top before serving for added flavor and presentation.
