Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 pieces large eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins (optional)
  • 0.5 cup chopped nuts (optional, such as walnuts or pecans)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy using a hand mixer or stand mixer.

Step 3

Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.

Step 4

In a separate medium-sized bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Step 6

Fold in the rolled oats by hand using a spatula. If desired, stir in the raisins and chopped nuts at this stage.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden. The centers may still look slightly soft but will firm up as the cookies cool.

Step 9

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days. Enjoy!
