Ingredients

  • 1 medium head (about 2 pounds) Green cabbage
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 1 small Yellow onion
  • 1.5 cups White vinegar
  • 0.75 cup Granulated sugar
  • 1 tablespoon Salt
  • 1 teaspoon Celery seeds
  • 1 teaspoon Mustard seeds
  • 0.25 teaspoon Ground turmeric

Directions

Step 1

Remove the outer leaves of the cabbage and rinse it thoroughly. Use a sharp knife or a food processor to finely shred the cabbage. Place the shredded cabbage into a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or a food processor. Add the grated carrots to the bowl with the cabbage.

Step 3

Finely dice the red bell pepper and yellow onion. Add both to the cabbage mixture, and toss everything together until evenly combined.

Step 4

In a medium saucepan, combine the white vinegar, granulated sugar, salt, celery seeds, mustard seeds, and ground turmeric. Heat the mixture over medium heat, stirring constantly, until the sugar dissolves completely, about 3–5 minutes.

Remove the saucepan from heat and let the pickling liquid cool slightly, about 5 minutes.
