Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove seeds and membranes. Lightly brush the outside of each pepper with a bit of olive oil and set aside.
In a large skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute.
Add the ground beef (or turkey) to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if needed.
