  • 4 pieces bell peppers (any color)
  • 1 pound ground beef or ground turkey
  • 1 cup cooked white or brown rice
  • 1 14-ounce can diced tomatoes (canned, undrained)
  • 1 medium onion, finely chopped
  • 2 pieces garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove seeds and membranes. Lightly brush the outside of each pepper with a bit of olive oil and set aside.

In a large skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute.
