Ingredients

  • 12 oz Mostaccioli pasta
  • 2 tbsp Olive oil
  • 6 cups Fresh spinach
  • 3 count Garlic cloves, minced
  • 1 cup Ricotta cheese
  • 2 cups Mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 24 oz Marinara sauce
  • 0.5 tsp Crushed red pepper flakes (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Dried Italian seasoning

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a small amount of olive oil and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the mostaccioli pasta and cook according to package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Gradually add the fresh spinach to the skillet, stirring frequently until wilted, about 3-4 minutes. Season with a pinch of salt and black pepper. Remove from heat and set aside.

Step 5

In a large mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, and the cooked spinach. Add the Italian seasoning and crushed red pepper flakes (if using), and mix until well combined.

Step 6

In the prepared baking dish, spread 1 cup of marinara sauce evenly across the bottom. Add half of the cooked pasta in an even layer on top of the sauce.

Step 7

Spread half of the ricotta-spinach mixture over the pasta. Then top with another cup of marinara sauce. Repeat the layers with the remaining pasta, ricotta mixture, and marinara sauce.

Step 8

Sprinkle the remaining 1 cup of mozzarella cheese and 1/2 cup of Parmesan cheese evenly over the top.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and golden brown.

Step 10

Remove the dish from the oven and let it cool for 5 minutes before serving. Garnish with extra Parmesan cheese or fresh basil if desired.
