Ingredients

  • 4 Large portobello mushrooms
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 cups Baby spinach
  • 1 cup Cherry tomatoes (halved)
  • 4 Eggs
  • 0.5 cups Shredded mozzarella cheese
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

Clean the portobello mushrooms by gently wiping them with a damp paper towel to remove any dirt. Carefully remove the stems and use a spoon to scrape out the gills. Place the mushrooms on the prepared baking sheet, cap-side down.
