Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter (for frosting)
  • 0.75 cups unsweetened cocoa powder (for frosting)
  • 3 cups powdered sugar
  • 0.25 cups whole milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed using a hand or stand mixer until the batter is smooth, about 2 minutes.

Step 4

Reduce the speed to low and carefully pour in the boiling water. Mix until the water is fully incorporated. Note: The batter will be very thin.

Step 5

Divide the batter evenly between the prepared cake pans. Gently tap the pans on the counter to remove air bubbles.

Step 6

Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 7

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Carefully transfer the cakes to a wire rack to cool completely.

Step 8

While the cakes are cooling, prepare the frosting. In a medium bowl, beat the unsalted butter with a mixer on medium speed until creamy, about 2 minutes.

Step 9

Add the cocoa powder to the butter and mix until fully combined.

Step 10

Gradually sift in the powdered sugar, alternating with the milk, and mix on low speed. Once all the sugar and milk are incorporated, increase the speed to high and beat for another 2 minutes. Stir in the vanilla extract.

Step 11

Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second cake layer over it.

Step 12

Frost the top and sides of the cake with the remaining frosting, smoothing it out evenly.

Step 13

Slice and serve Morty's Amazing Chocolate Cake. Enjoy!
