  • 1 14-ounce can diced tomatoes, with their juices
  • 4 cups vegetable broth
  • 0.5 cup dried apricots, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cups baby spinach
  • 0.25 cup fresh cilantro, chopped

Directions
