Ingredients

  • 300 milliliters chicken or vegetable stock
  • 1 cup couscous
  • 0.5 cup dried cranberries
  • 0.5 cup, chopped fresh parsley
  • 0.25 cup, toasted slivered almonds
  • 1 zested and juiced lemon
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the ground turkey and cook, breaking it into crumbles with a spoon, until fully cooked and browned, about 8 minutes. Remove the turkey from the pan and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and the diced onion. Cook until softened, about 5 minutes.
