Ingredients

  • 2 tablespoons Olive oil
  • 4 pieces Moroccan-style bread (khobz) or crusty sandwich rolls
  • 2 tablespoons Harissa (optional, for garnish)
  • 0.5 cup Pickled vegetables (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks. Boil them in salted water for 12–15 minutes or until fork-tender. Drain and set aside.

Step 2

While the potatoes are boiling, place the eggs in a saucepan, cover with water, and bring to a boil. Cook for 10 minutes, then transfer to an ice bath to cool. Peel the eggs and slice them into rounds. Set aside.

Mince the garlic, parsley, and cilantro finely.
