Ingredients

  • 14 ounces canned diced tomatoes
  • 1 cup vegetable stock or fish stock
  • 0.25 teaspoons saffron threads
  • 0.5 pieces preserved lemon, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoons black pepper
  • 1 loaf crusty bread, for serving

Directions

Step 1

Scrub and de-beard the mussels under cold running water. Discard any mussels that are cracked or do not close when tapped. Set aside.

Step 2

Heat the olive oil in a large, deep skillet or pot over medium heat.

Add the chopped onion and sauté for 4-5 minutes until softened and translucent.

Stir in the minced garlic, ground cumin, coriander, and paprika. Cook for 1 minute until fragrant.
