Ingredients

  • 1 cup couscous
  • 1.25 cups vegetable broth
  • 2 tablespoons olive oil
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoons ground cumin
  • 1 teaspoons ground coriander
  • 0.5 cup dried apricots
  • 0.25 cup raisins or golden raisins
  • 0.25 cup sliced almonds
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh mint
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Heat the vegetable broth in a medium saucepan over medium-high heat until it begins to simmer.

Step 2

Stir in the ground cinnamon, cumin, coriander, salt, and pepper. Add 1 tablespoon of olive oil to the mixture.

Step 3

Remove the saucepan from heat and immediately stir in the couscous. Cover with a lid and let it sit for 5-8 minutes to absorb the liquid.

Step 4

While the couscous is resting, chop the dried apricots into small pieces and roughly chop the parsley and mint leaves.

Step 5

Once the couscous has absorbed all the liquid, fluff it gently with a fork to separate the grains.

Step 6

Add the dried apricots, raisins, almonds, parsley, mint, lemon zest, and lemon juice to the couscous. Drizzle with the remaining 1 tablespoon of olive oil and toss gently to combine.

Step 7

Taste and adjust seasoning if necessary. Add more salt, pepper, or lemon juice as desired.

Step 8

Serve warm or at room temperature as a flavorful side dish or light main course.
