Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh cilantro
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 4 ears corn on the cob

Directions

Step 1

In a small bowl, combine ground cumin, ground coriander, paprika, ground cinnamon, ground ginger, cayenne pepper, salt, and black pepper.

Step 2

Add olive oil to the spice mixture and stir to create a smooth paste.

Step 3

Chop the fresh cilantro finely and set it aside. Zest and juice the lemon, setting both aside in separate containers.

Step 4

Preheat your grill or stovetop grill pan to medium-high heat.

Step 5

Peel back the husks on the corn without removing them fully. Remove the silk strands from each ear of corn, then fold the husks back over the corn. Soak the ears in a bowl of water for 10 minutes to prevent burning on the grill.

Step 6

After soaking, shake off excess water and place the corn on the grill. Grill for 12–15 minutes, turning occasionally, until the corn is tender and lightly charred.

Step 7

Carefully peel back or remove the husks from the cooked corn. Using a brush or spoon, coat each ear with a generous layer of the spice paste while the corn is still warm.

Step 8

Sprinkle the chopped cilantro over the spiced corn, followed by a light sprinkling of lemon zest and a squeeze of lemon juice for a bright finish.

Step 9

Serve immediately and enjoy the bold, aromatic flavors of Moroccan Spice Corn Topper!
