Ingredients

  • 8 pieces lamb chops
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup couscous
  • 1.25 cups vegetable broth
  • 0.5 cup dried apricots, diced
  • 0.25 cup raisins
  • 0.25 cup slivered almonds, toasted
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon butter

Directions

Step 1

Preheat your grill or stovetop grill pan to medium-high heat.

Step 2

In a small bowl, mix together ground cumin, ground coriander, paprika, ground cinnamon, garlic powder, salt, and black pepper.

Step 3

Rub the lamb chops evenly with olive oil, then coat them thoroughly with the spice mixture. Set aside to marinate while preparing the couscous.

Step 4

In a medium saucepan, bring vegetable broth to a boil. Stir in couscous, diced dried apricots, and raisins. Cover and remove from heat. Let sit for 5 minutes.

Step 5

Fluff the couscous with a fork and stir in butter, toasted slivered almonds, chopped fresh mint, and lemon juice. Adjust seasoning with salt and pepper, if needed.

Step 6

Grill the lamb chops for 3-4 minutes per side, or until cooked to your desired doneness (medium-rare recommended). Allow the chops to rest for 5 minutes before serving.

Step 7

Serve the Moroccan-spiced lamb chops over the fruited couscous. Garnish with additional chopped mint if desired.
