Ingredients

  • 12 large scallops Sea scallops

  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1.5 cups Cherry tomatoes
  • 1 inch piece, grated Fresh ginger
  • 0.25 small, finely diced Red onion
  • 2 tablespoons, chopped Fresh cilantro
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 clove, minced Garlic

Directions

Step 1

Pat the scallops dry with paper towels and season both sides with the ground cumin, coriander, paprika, salt, and black pepper.

Step 2

Heat 1.5 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the scallops in a single layer (work in batches if needed to avoid overcrowding).

Step 3

Sear the scallops for 2-3 minutes on one side without moving them until a golden crust forms. Flip and cook the other side for an additional 2-3 minutes or until they are just opaque in the center. Remove the scallops from the skillet and set aside.
