Ingredients

  • 1 cup couscous
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 whole lemon (zest and juice)
  • 0.25 cup fresh mint leaves, finely chopped
  • 0.25 cup raisins
  • 0.25 cup slivered almonds, toasted
  • 0.5 teaspoons ground cumin
  • 0.25 teaspoons ground cinnamon
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced

Directions

Step 1

Start by preparing the couscous. Bring 1 cup of water to a boil in a medium saucepan.

Step 2

Remove the saucepan from heat and stir in 1 cup of couscous, 1 tablespoon of olive oil, and 0.5 teaspoons of salt.

Step 3

Cover the saucepan and let the couscous sit for 5 minutes to absorb the water.

Meanwhile, zest and juice the lemon. Finely chop the fresh mint leaves, and toast the slivered almonds if not already done.
