  • 0.5 cup dried apricots, chopped
  • 0.25 cup fresh parsley, chopped
  • 1 cup couscous
  • 1.25 cups water or vegetable broth (for couscous)
  • 1 tablespoon butter or olive oil (optional, for couscous)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.
