Ingredients

  • 500 grams Beef stew meat
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric powder
  • 400 grams Canned diced tomatoes
  • 250 milliliters Beef stock
  • 1 cup Chickpeas, drained and rinsed
  • 10 pieces Dried apricots, chopped
  • 2 tablespoons Fresh cilantro, chopped
  • 1 cup Couscous
  • 1 cup Water or chicken stock
  • 1 tablespoon Honey
  • 0.5 teaspoon Ground cinnamon (for couscous)
  • 2 tablespoons Sliced almonds, toasted
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and black pepper. Add the beef to the pot and sear it on all sides until browned. Remove the beef and set aside.

Step 3

Reduce the heat to medium and add the remaining tablespoon of olive oil to the pot. Sauté the chopped onion for 4-5 minutes, or until softened.

Add the minced garlic, ground cinnamon, cumin, coriander, paprika, and turmeric to the pot. Stir for about 1 minute until fragrant.

Return the beef to the pot and stir to coat it with the spices.

Pour in the diced tomatoes and beef stock. Stir well, bring to a boil, then reduce the heat to low and cover. Simmer for 30 minutes.

Add the chickpeas and chopped dried apricots to the pot. Stir and simmer uncovered for an additional 15 minutes, or until the sauce has thickened and the beef is tender.

While the beef is cooking, prepare the couscous. In a small pot, bring the water or chicken stock to a boil.

Stir the honey and cinnamon into the boiling liquid, then remove the pot from the heat. Add the couscous, cover, and let it sit for 5 minutes.

Fluff the couscous with a fork and stir in the toasted almonds for added texture.
