Ingredients

  • 3 tablespoons olive oil
  • 1 medium, finely chopped onion
  • 4 cloves, minced garlic
  • 1 medium, diced red bell pepper
  • 2 tablespoons, finely chopped fresh cilantro
  • 2 tablespoons tomato paste
  • 2 cups white rice
  • 4 cups seafood stock
  • 1 pound, peeled and deveined shrimp
  • 1 pound, scrubbed clean clams
  • 1 pound, scrubbed clean mussels
  • 1 cup, frozen green peas
  • 1 teaspoon paprika
  • 1 teaspoon, dried oregano
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 4 each, for serving lime wedges

Directions

Step 1

Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.

Step 2

Add the chopped onion, garlic, and red bell pepper. Sauté for 3-4 minutes or until softened and fragrant.

Step 3

Stir in the fresh cilantro and tomato paste, cooking for another 2 minutes to incorporate the flavors.

Step 4

Add the white rice to the skillet, stirring to coat the grains with the mixture for about 1-2 minutes.

Step 5

Pour in the seafood stock and bring the mixture to a gentle boil.

Step 6

Season with paprika, oregano, salt, and black pepper. Stir well to combine.

Step 7

Reduce the heat to low, cover the skillet with a tight-fitting lid, and let the rice simmer for 10 minutes.

Step 8

While the rice cooks, prepare the seafood. Rinse the shrimp, clams, and mussels under cold water and pat them dry.

Step 9

After 10 minutes, gently nestle the shrimp, clams, and mussels into the rice mixture. Cover again and cook for another 10-12 minutes, or until the seafood is fully cooked and the clams and mussels have opened (discard any that remain closed).

Step 10

Add the frozen green peas to the skillet during the last 5 minutes of cooking, allowing them to heat through.

Step 11

Once the rice is tender and the seafood is cooked, remove the skillet from heat and let it rest, covered, for 5 minutes.

Step 12

Fluff the rice gently with a fork and serve the dish hot, garnished with lime wedges on the side for an extra burst of citrus flavor.
