Ingredients

  • 420 grams All-purpose flour
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 120 milliliters Whole milk
  • 56 grams Unsalted butter (melted and slightly cooled)
  • 1 unit Large egg
  • 170 grams Unsalted butter (softened, for laminating)
  • 200 grams Light brown sugar
  • 2 teaspoons Ground cinnamon
  • 1 tablespoon Orange zest
  • 50 grams Granulated sugar (for finishing)

Directions

Step 1

In a large bowl, whisk together the all-purpose flour, granulated sugar, salt, and instant yeast.

Step 2

In a separate bowl, warm the milk until lukewarm (approximately 40°C or 100°F). Stir in the melted butter and egg until combined.

Step 3

Gradually add the wet ingredients to the dry ingredients. Mix until a shaggy dough forms.

Step 4

Knead the dough on a lightly floured surface for 8-10 minutes, or until smooth and elastic. Alternatively, knead in a stand mixer fitted with a dough hook for 5-7 minutes.

Step 5

Place the dough in a lightly greased bowl, cover it with plastic wrap or a clean towel, and let it rise in a warm spot until doubled in size, about 1.5 to 2 hours.

Step 6

While the dough rises, prepare the cinnamon-sugar filling by mixing the light brown sugar, ground cinnamon, and orange zest in a small bowl.

Step 7

Once the dough has risen, punch it down and roll it out on a floured surface into a 16x12-inch rectangle.

Step 8

Spread the softened butter evenly over the entire surface of the dough.

Step 9

Sprinkle the cinnamon-sugar filling evenly over the buttered dough, pressing lightly to adhere.

Step 10

Roll up the dough tightly into a log, starting from the long side. Pinch the seam to seal.

Step 11

Use a sharp knife or unflavored dental floss to cut the log into 12 equal pieces.

Step 12

Place each piece, spiral side up, into a lightly greased standard muffin tin. Cover loosely with plastic wrap and let rise for 45 minutes, or until puffed.

Step 13

Preheat your oven to 190°C (375°F).

Step 14

Bake the buns for 20-25 minutes, or until golden brown and cooked through.

Step 15

While the buns are baking, prepare the finishing sugar by placing the granulated sugar in a shallow dish.

Step 16

Allow the buns to cool for 5 minutes in the tin, then carefully remove them and roll the tops in the granulated sugar for a sparkling finish.

Step 17

Serve the Morning Buns warm or at room temperature. Enjoy!
