Ingredients

  • 6 pieces bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 large, finely chopped yellow onion
  • 4 cloves, minced garlic
  • 1.5 teaspoons ground cumin
  • 1.5 teaspoons ground coriander
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 tablespoon, grated fresh ginger
  • 2 cups chicken broth
  • 1 whole, quartered and seeds removed preserved lemon
  • 0.5 cup green olives
  • 0.5 cup, chopped dried apricots
  • 1 tablespoon honey
  • 0.25 cup, chopped fresh cilantro
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon (adjust to taste) black pepper

Directions

Step 1

Heat the olive oil in a large heavy-bottomed tagine dish or pot over medium heat.

Step 2

Season the chicken thighs with salt and black pepper, then sear them for 4-5 minutes per side until golden brown. Remove and set aside.

Step 3

In the same pot, add the chopped onion and cook for about 5 minutes until softened and translucent.

Step 4

Stir in the garlic, cumin, coriander, cinnamon, turmeric, paprika, and ginger. Cook for 1-2 minutes until fragrant, taking care not to burn the spices.

Step 5

Return the seared chicken thighs to the pot, nestling them among the onions and spices.

Step 6

Pour in the chicken broth, ensuring the liquid covers most of the chicken. Bring to a simmer.

Step 7

Add the preserved lemons, green olives, dried apricots, and honey. Stir gently to combine.

Step 8

Lower the heat and cover the tagine. Let it simmer gently for 40-45 minutes, stirring occasionally, until the chicken is tender and the flavors have melded together.

Step 9

Adjust the seasoning with more salt and pepper, if needed.

Step 10

Garnish with fresh cilantro before serving.

Step 11

Serve hot alongside fluffy couscous, crusty bread, or steamed rice.
