Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 0.75 cup milk
  • 1 teaspoon vanilla extract
  • 1 egg, large
  • 1 cup fresh blueberries
  • 0.75 cup fresh raspberries
  • 2 tablespoons coarse sugar (optional, for topping)

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Set aside.

Step 3

In a medium bowl, whisk the melted butter, milk, vanilla extract, and egg until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Gently fold in the blueberries and raspberries, trying not to break the fruit.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

If desired, sprinkle a pinch of coarse sugar on top of each muffin for added texture and sweetness.

Step 8

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the pan for 5 minutes. Transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature, and enjoy!
