Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Unsalted butter
  • 0.5 cups Cold water
  • 1 teaspoon Salt
  • 1 pound Ground beef (or plant-based substitute)
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoons Ground coriander
  • 0.25 teaspoons Black pepper
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons Vegetable oil (for cooking filling)
  • 1 Egg, beaten (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt.

Step 2

Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

Step 4

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 5

In a medium skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3 minutes.

Step 6

Add the ground beef (or plant-based substitute) to the skillet and cook until browned, breaking it up into small crumbles as it cooks, about 5-7 minutes.

Step 7

Stir in the ground cumin, smoked paprika, ground coriander, black pepper, and salt to taste. Cook for another 2 minutes to allow the spices to bloom.

Step 8

Remove the skillet from heat and let the filling cool slightly. Once cooled, stir in the shredded cheddar cheese.

Step 9

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 10

On a lightly floured surface, roll out the chilled dough to 1/8-inch thickness. Use a round cutter (approximately 4 inches in diameter) to cut out circles from the dough.

Step 11

Place a tablespoon of the filling onto the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use the tines of a fork to crimp the edges.

Step 12

Arrange the prepared Montokers on the baking sheet. Brush the tops with the beaten egg to create a golden crust.

Step 13

Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and flaky.

Step 14

Allow the Montokers to cool slightly before serving. Enjoy warm as a savory snack or appetizer!
