Ingredients

  • 2 cups whole kernel corn
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup all-purpose flour
  • 0.5 cup cornmeal
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 eggs
  • 0.5 cup whole milk
  • 2 green onions, finely chopped
  • 1 cup vegetable oil (for frying)
  • 0.5 cup sour cream (optional, for serving)
  • 2 tablespoons chopped cilantro (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the flour, cornmeal, baking powder, ground cumin, smoked paprika, salt, and black pepper. Whisk to mix evenly.

Step 2

In a separate medium-sized bowl, whisk together the eggs and milk until smooth.

Step 3

Gradually pour the wet mixture into the dry ingredients while stirring. Mix until a thick batter forms.

Step 4

Fold in the corn, shredded Monterey Jack cheese, and chopped green onions until evenly distributed.

Step 5

Heat the vegetable oil in a large skillet over medium heat. The oil should be hot but not smoking (approximately 350°F).

Step 6

Scoop 2 to 3 tablespoons of batter per fritter and carefully drop it into the hot oil, flattening slightly with a spatula.

Step 7

Fry each fritter for 2-3 minutes per side or until golden brown and crispy. Cook in batches, being careful not to overcrowd the pan.

Step 8

Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.

Step 9

Serve warm with a dollop of sour cream and a sprinkle of chopped cilantro, if desired.
