Ingredients

  • 500 g Baby potatoes
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 250 g Pasta (penne or fusilli preferred)
  • 100 g Pepperoni slices
  • 2 cloves Garlic cloves, minced
  • 0.25 tsp Red chili flakes
  • 50 g Grated Parmesan cheese
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Wash the baby potatoes thoroughly and cut them into bite-sized pieces, leaving the skin on for extra texture.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes, sprinkle with salt and black pepper, and cook for 10-12 minutes, stirring occasionally, until golden brown and crispy. Remove the potatoes from the skillet and set aside.

Step 3

While the potatoes are cooking, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 4

In the same skillet you used for the potatoes, add the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the red chili flakes and pepperoni slices, cooking for 2-3 minutes until the pepperoni becomes slightly crispy.

Step 5

Reduce the heat to low and add the drained pasta to the skillet. Toss to coat with the garlic, pepperoni, and oil. Add a splash of the reserved pasta water to create a light sauce.

Step 6

Gently stir in the crispy potatoes and let everything warm through for 2 minutes.

Step 7

Sprinkle the grated Parmesan cheese over the pasta and potatoes, tossing until evenly coated. Taste and adjust seasoning with more salt or black pepper if needed.

Step 8

Garnish with freshly chopped parsley before serving. Enjoy your quick and flavorful Monica's Potatoes with Pepperoni Pasta 5Fix!
