Ingredients

  • 1 pound ground beef
  • 1 large egg
  • 1 cup breadcrumbs
  • 0.25 cup milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup pineapple juice
  • 0.5 cup white vinegar
  • 0.75 cup brown sugar
  • 0.5 cup ketchup
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 medium bell pepper, diced
  • 1 cup pineapple chunks

Directions

Step 1

In a large bowl, combine ground beef, egg, breadcrumbs, milk, onion powder, garlic powder, salt, and black pepper.

Step 2

Mix well to incorporate all ingredients, but avoid overmixing to keep meatballs tender.

Step 3

Form mixture into 1-inch meatballs and set aside on a plate.

Step 4

Heat vegetable oil in a large skillet over medium heat.

Step 5

Add meatballs to the skillet in batches, cooking each side for 2-3 minutes until browned. Remove from skillet and set aside.

Step 6

To make the sauce, combine pineapple juice, white vinegar, brown sugar, ketchup, and soy sauce in a medium bowl. Mix well.

Step 7

In a small bowl, whisk together cornstarch and water to create a slurry.

Step 8

Return the skillet to medium heat and pour in the sauce mixture. Stir occasionally and bring it to a gentle simmer.

Step 9

Add the cornstarch slurry to the simmering sauce, stirring constantly until the sauce thickens, about 1-2 minutes.

Step 10

Add the browned meatballs back into the skillet, stirring to coat them in the sauce.

Step 11

Toss diced bell pepper and pineapple chunks into the skillet and cook for an additional 5-7 minutes until the vegetables are tender and the meatballs are cooked through.

Step 12

Serve warm over steamed rice, noodles, or as a standalone dish. Enjoy!
