  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 3 medium Carrots, peeled and sliced
  • 4 medium Potatoes, peeled and cubed
  • 2 tablespoons Vegetable oil
  • 2 leaves Bay leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0 optional Sour cream (for garnish)
  • 0 optional Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the chopped onions and cook until they are soft and translucent, about 5-7 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Sprinkle in the sweet Hungarian paprika and stir quickly to coat the onions and garlic in the spice. Be careful not to burn the paprika.
