  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1.5 teaspoons Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Ginger (ground)
  • 0.5 teaspoon Salt
  • 1 cup Pumpkin puree
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Milk
  • 0.5 cup Optional: chopped walnuts or chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.

Step 2

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

Step 3

In a separate medium bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and milk. Whisk until smooth.

Step 4

Gently fold the wet ingredients into the dry ingredients using a spatula. Mix until just combined; do not overmix.

Step 5

If you are adding walnuts or chocolate chips, fold them into the batter at this stage.

Step 6

Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature and enjoy!
