Ingredients

  • 4 Boneless, skinless chicken breasts
  • 0.5 cup All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 8 ounces Button or cremini mushrooms, sliced
  • 3 cloves Garlic, minced
  • 0.75 cup Dry Marsala wine
  • 0.75 cup Chicken broth
  • 0.25 cup Heavy cream
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/4 inch thick.

Step 2

In a shallow dish, combine the flour, salt, black pepper, and garlic powder. Dredge the chicken breasts in the flour mixture, ensuring they are well-coated. Shake off any excess flour.

Step 3

In a large skillet, heat the olive oil and 1 tablespoon of the butter over medium heat. Once hot, add the chicken breasts in a single layer (you may need to do this in batches). Cook for 4-5 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and set aside.

Step 4

In the same skillet, melt the remaining tablespoon of butter. Add the sliced mushrooms and cook for 5 minutes, stirring occasionally, until softened and lightly browned.

Step 5

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 6

Add the Marsala wine to the skillet, stirring to scrape up any browned bits from the bottom of the pan. Allow the wine to simmer for 2 minutes.

Step 7

Add the chicken broth and heavy cream, stirring to combine. Bring the sauce to a gentle simmer and let it cook for 5-7 minutes, or until it thickens slightly.

Step 8

Return the chicken breasts to the skillet, nestling them into the sauce. Spoon some of the sauce over the chicken and let everything simmer together for 3-5 minutes.

Step 9

Garnish with chopped parsley and serve hot with your choice of pasta, mashed potatoes, or crusty bread.
