  • 0.5 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 2 cups Grated zucchini
  • 0.5 cups Chopped walnuts (optional)
  • 1 teaspoon Unsalted butter or nonstick spray (for greasing)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Grease a 9x5-inch loaf pan with unsalted butter or nonstick spray and set aside.

Step 3

In a medium-sized mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, ground cinnamon, and salt until thoroughly combined.

Step 4

In a separate large bowl, beat the eggs using a whisk or fork until well blended.

Add the vegetable oil and vanilla extract to the eggs and stir to combine.

Step 11

Carefully transfer the bread to a wire rack and let it cool completely before slicing and serving.
