  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 cup frozen peas
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion and sauté for 4-5 minutes until softened and translucent.
