Heat a large skillet or sauté pan over medium heat. Add 1 tablespoon of olive oil to the pan.
Brown the Italian sausage links on all sides until golden, about 8–10 minutes. They do not need to be fully cooked at this stage. Remove the sausages from the pan and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Stir in the sliced onions and bell peppers, and cook over medium heat until softened, about 5–7 minutes.
Add the minced garlic and cook for an additional 1–2 minutes, until fragrant.
Deglaze the pan with the white wine, if using, scraping up any browned bits from the bottom of the pan. Cook for 2–3 minutes to reduce slightly.
Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, crushed red pepper flakes (if using), salt, and black pepper. Mix well to combine.
Return the browned sausages to the skillet, nestling them into the sauce and vegetables.
Lower the heat and allow the dish to simmer uncovered for 25–30 minutes, stirring occasionally, until the sauce thickens and the sausages are fully cooked through.
While the sauce simmers, cook the pasta according to the package instructions, or prepare crusty bread for serving.
Once the sauce is done, taste and adjust seasonings if necessary. Garnish with fresh chopped parsley right before serving.
