Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 2 cups buttermilk
  • 2 pieces large eggs
  • 4 tablespoons unsalted butter (melted)
  • 1 teaspoons vanilla extract
  • 1 tablespoon butter or oil (for greasing the pan)

Directions

Step 1

In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt. Whisk to combine.

Step 2

In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.

Step 3

Pour the wet ingredients into the dry ingredients. Gently mix with a whisk or spatula until just combined. Some lumps are fine—do not overmix, as this can make the pancakes dense.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

Step 5

Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake. Leave space between pancakes for easy flipping.

Step 6

Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip gently and cook for another 1-2 minutes, or until golden brown on both sides.

Step 7

Transfer the cooked pancakes to a plate. Keep warm by tenting with foil, or place in a low-heat oven while cooking the remaining batter.

Step 8

Serve warm with your favorite toppings, such as maple syrup, fresh fruit, whipped cream, or a dusting of powdered sugar.
