Ingredients

  • 6 large Russet potatoes
  • 4 large Eggs
  • 1 cup Mayonnaise
  • 2 tablespoons Yellow mustard
  • 1 tablespoon Dill pickle relish
  • 2 stalks Celery
  • 1 small Onion
  • 0.5 teaspoons Paprika
  • 1 teaspoon (to taste) Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Peel and dice the russet potatoes into 1-inch chunks.

Step 2

Bring a large pot of salted water to a boil. Add the diced potatoes and cook for 10-15 minutes or until they are fork-tender. Drain and set aside to cool.

Step 3

While the potatoes are cooking, place the eggs in a small pot and cover them with cold water. Bring the water to a boil, then turn off the heat and let the eggs sit, covered, for 10 minutes. Drain and transfer the eggs to an ice water bath. Once cooled, peel and chop the eggs into small pieces.

Step 4

Finely chop the celery stalks and onion.

Step 5

In a large mixing bowl, combine the mayonnaise, yellow mustard, dill pickle relish, salt, black pepper, and paprika. Mix well to create the dressing.

Step 6

Gently fold in the cooked potatoes, chopped eggs, celery, and onion into the dressing. Ensure everything is evenly coated.

Step 7

Taste and adjust seasoning with additional salt or pepper if needed.

Step 8

Cover and chill the potato salad in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.

Step 9

Sprinkle with a dash of paprika on top for garnish before serving.
