Ingredients

  • 2 pounds ground beef
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 0.5 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 0.25 cup ketchup (for glaze)
  • 2 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper for easier removal.

Step 2

In a large mixing bowl, combine the ground beef, finely chopped onion, minced garlic, breadcrumbs, milk, 1/2 cup ketchup, Worcestershire sauce, egg, salt, black pepper, and dried parsley.

Step 3

Using clean hands or a large spoon, mix the ingredients until well incorporated but do not overmix, as this can make the meatloaf dense.

Step 4

Transfer the meat mixture into the prepared loaf pan and shape it evenly into a loaf. Set aside.

Step 5

In a small bowl, whisk together 1/4 cup ketchup, brown sugar, and apple cider vinegar to create the glaze.

Step 6

Spread the glaze evenly over the top of the uncooked meatloaf using a spoon or a pastry brush.

Step 7

Place the meatloaf in the preheated oven and bake for 55–60 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer.

Step 8

Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing. This helps the juices redistribute and keeps the meatloaf moist.

Step 9

Slice and serve warm, optionally garnished with additional parsley or alongside mashed potatoes and steamed vegetables.
