Ingredients

  • 2 cups (grated) Zucchini
  • 3 cups All-purpose flour
  • 2 cups Granulated sugar
  • 1 cup Vegetable oil
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.75 cup Chopped walnuts (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease two 9x5-inch loaf pans or line them with parchment paper.

Step 2

In a large mixing bowl, beat the eggs until light and fluffy. Add the sugar, oil, and vanilla extract, and mix well until combined.

Step 3

Slowly stir in the grated zucchini, making sure it is evenly distributed through the wet mixture.

Step 4

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg.

Step 5

Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix.

Step 6

If using, fold in the chopped walnuts for a nutty crunch.

Step 7

Divide the batter evenly between the prepared loaf pans, smoothing the tops with a spatula.

Step 8

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaves comes out clean.

Step 9

Remove the pans from the oven and allow the loaves to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Step 10

Slice and serve as is, or spread with butter or cream cheese for an extra indulgent treat. Enjoy!
