Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 2 teaspoons baking soda
  • 0.5 teaspoon salt
  • 15 ounces canned fruit cocktail (with juice)
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup light brown sugar
  • 0.5 cup chopped pecans (optional)
  • 0.5 cup unsalted butter
  • 0.5 cup evaporated milk
  • 0.5 cup granulated sugar (for topping)
  • 1 teaspoon vanilla extract (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish, or line it with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, and salt. Mix until evenly distributed.

Step 3

Add the canned fruit cocktail (including all the juice), eggs, and vanilla extract to the dry ingredients. Mix well with a wooden spoon or a spatula until just combined. Avoid overmixing.

Step 4

Pour the batter into the prepared baking dish and spread it evenly.

Step 5

Sprinkle the brown sugar and chopped pecans evenly over the top of the batter.

Step 6

Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 7

While the cake is baking, prepare the topping. In a small saucepan, melt the unsalted butter over medium heat.

Step 8

Once melted, add the evaporated milk, granulated sugar, and vanilla extract. Stir constantly until the sugar is fully dissolved and the mixture is smooth. Remove from heat.

Step 9

When the cake is done baking, remove it from the oven and, while still warm, slowly pour the topping over the cake. Allow it to seep into the cake.

Step 10

Let the cake cool to room temperature before serving. Cut into squares and enjoy!
