Ingredients

  • 2 tablespoons Olive oil
  • 2 pieces (boneless, skinless) Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium (diced) Yellow onion
  • 3 medium (peeled and sliced into rounds) Carrots
  • 3 medium (sliced) Celery stalks
  • 4 minced Garlic cloves
  • 8 cups Chicken broth
  • 8 ounces Egg noodles
  • 1 teaspoon (minced) Fresh thyme
  • 2 tablespoons (chopped, plus more for garnish) Fresh parsley
  • 1 whole Bay leaf
  • 1 tablespoon (optional for brightness) Lemon juice

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with salt and pepper. Sear them in the pot for about 4-5 minutes per side until golden brown, but not necessarily cooked through. Remove the chicken and set aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the onions are translucent and the vegetables start to soften.

Step 4

Add the minced garlic and sauté for another minute until fragrant.

Step 5

Pour in the chicken broth and stir to combine. Add the thyme, parsley, bay leaf, and a pinch of salt and pepper if needed. Bring the soup to a gentle boil.

Step 6

Return the seared chicken breasts to the pot. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through.

Step 7

Remove the chicken breasts and shred them with two forks. Return the shredded chicken to the pot.

Step 8

Add the egg noodles and continue cooking on a low simmer for an additional 8-10 minutes, or until the noodles are tender.

Step 9

Taste the soup and adjust seasoning as needed. If desired, stir in the lemon juice for a hint of brightness.

Step 10

Discard the bay leaf, ladle the soup into bowls, and garnish with additional chopped parsley. Serve immediately.
