Ingredients

  • 2 tablespoons olive oil
  • 2 pounds ground beef (85% lean)
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 4 cloves garlic cloves, minced
  • 1 medium jalapeño, seeded and finely chopped
  • 3 tablespoons tomato paste
  • 28 ounces crushed tomatoes
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried oregano
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 ounce dark chocolate (70% cocoa), finely chopped
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 4 pieces lime wedges (optional, for serving)

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat and transfer the beef to a plate.

Step 3

In the same pot, add the diced onion, green bell pepper, garlic, and jalapeño. Sauté for 5-7 minutes, stirring frequently, until the vegetables are softened and the onions are translucent.

Step 4

Stir in the tomato paste and cook for 2 minutes, allowing it to darken slightly and coat the vegetables.

Step 5

Return the browned ground beef to the pot. Add the crushed tomatoes, beef broth, chili powder, cumin, smoked paprika, cayenne pepper, dried oregano, kosher salt, and black pepper. Stir everything together until well combined.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 45 minutes to allow the flavors to develop, stirring occasionally to prevent sticking.

Step 7

Five minutes before the chili is done simmering, stir in the finely chopped dark chocolate. Let it melt fully into the chili, adding a subtle depth of flavor.

Step 8

Taste the chili and adjust seasoning as needed, adding more cayenne for heat or salt for balance.

Step 9

Serve the chili hot, garnished with chopped fresh cilantro if desired. Offer lime wedges on the side for a bright, citrusy contrast.
