Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 4 None eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 0.5 cup crushed pineapple (drained)
  • 1 cup chopped walnuts or pecans (optional)
  • 8 ounces cream cheese (softened)
  • 0.5 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans or a 9x13-inch rectangular pan.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3

In a separate bowl, beat the eggs, vegetable oil, and vanilla extract until smooth and well combined.

Step 4

Gradually add the wet ingredients into the bowl with the dry ingredients, stirring until just combined.

Step 5

Fold in the grated carrots, crushed pineapple, and chopped nuts (if using). Be careful not to overmix.

Step 6

Pour the batter evenly into the prepared cake pans and smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 40–50 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 9

In the meantime, make the cream cheese frosting. In a large bowl, beat the softened cream cheese and butter until smooth and creamy.

Step 10

Gradually add the powdered sugar, one cup at a time, beating well after each addition. Mix in the vanilla extract.

Step 11

Once the cake layers are completely cool, frost the top of one layer with the cream cheese frosting, then place the second layer on top. Frost the top and sides of the assembled cake.

Step 12

For a 9x13–inch cake, simply spread the frosting evenly over the top once the cake has cooled.

Step 13

Garnish with additional nuts or grated carrots if desired. Slice and serve!
