Ingredients

  • 1 lb Pork loin
  • 3 tbsp Soy sauce
  • 2 tbsp Cornstarch
  • 2 tbsp Vegetable oil
  • 1 large Onion, diced
  • 2 cups Celery, finely sliced
  • 1 medium Bell pepper, diced
  • 1 can (8 oz) Water chestnuts, sliced
  • 1 cup Mushrooms, sliced
  • 3 cloves Garlic, minced
  • 1.5 cups Chicken broth
  • 2 tbsp Oyster sauce
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 4 cups Cooked white rice or noodles (optional, for serving)

Directions

Step 1

Slice the pork loin into thin strips, about 2 inches long. In a mixing bowl, combine the pork strips, 2 tablespoons of soy sauce, and 1 tablespoon of cornstarch. Toss to coat and set aside to marinate for 15 minutes.

Step 2

In a small bowl, mix the chicken broth, oyster sauce, remaining 1 tablespoon of soy sauce, sugar, salt, black pepper, and 1 tablespoon of cornstarch. Stir until smooth and set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for 5-6 minutes, or until lightly browned and fully cooked. Remove the pork from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the onion, celery, and bell pepper, and stir-fry for 3-4 minutes until slightly softened.

Step 5

Stir in the mushrooms and water chestnuts. Cook for another 2 minutes, then add the minced garlic. Stir-fry for 30 seconds until fragrant.

Step 6

Return the cooked pork to the skillet with the vegetables. Pour the sauce mixture over the pork and vegetables. Stir well to combine.

Step 7

Reduce the heat to medium and cook for another 3-4 minutes, or until the sauce has thickened and evenly coats the ingredients.

Step 8
