Ingredients

  • 480 grams freshly milled whole wheat flour
  • 120 grams all-purpose flour
  • 360 milliliters warm water
  • 7 grams active dry yeast
  • 40 grams honey
  • 10 grams salt
  • 30 milliliters olive oil

Directions

Step 1

In a large mixing bowl, combine warm water (about 38°C), honey, and active dry yeast. Stir gently and let the mixture sit for 5-10 minutes until it becomes frothy.

Step 2

Add the olive oil, freshly milled whole wheat flour, and all-purpose flour to the yeast mixture. Mix until a shaggy dough forms.

Step 3

Sprinkle salt over the dough and knead it by hand or with a stand mixer (using a dough hook) for 8-10 minutes until the dough becomes smooth and elastic.

Step 4

Lightly oil a large bowl, place the dough in it, and cover with a damp kitchen towel. Let the dough rise in a warm spot for 60 minutes, or until it has doubled in size.

Step 5

Punch down the dough to release the air and transfer it to a lightly floured surface. Shape it into a loaf by flattening it into a rectangle and rolling it tightly.

Step 6

Place the shaped dough into a greased 9x5 inch loaf pan, cover it with a damp towel, and let it rise again for 30 minutes.

Step 7

Preheat the oven to 180°C (350°F). Once the dough has risen and slightly puffed, bake the bread for 30-35 minutes, or until the top is golden and sounds hollow when tapped.

Step 8

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Step 9

Slice and enjoy your fresh, homemade bread! Store leftovers in an airtight container for up to 3 days.
